I love squash and all its varieties... acorn, spaghetti, butternut, winter or summer squash aka zucchini. Zucchini is so fun and versatile and pairs well with just about anything. I recently made zucchini fritters and knew I had to share the recipe. So here's an easy, quick, low calorie, veggie snack you'll definitely have to make more than once.
You'll also need a grater, colander, mixing bowl, non stick skillet, wire cooling rack.
Trim the ends off of your zucchini and shred the remaining with a grater.
Place the shredded zucchini in a colander set inside a bowl and sprinkle lightly with salt. Allow the zucchini to sit for approx. 10 minutes.
Push/squeeze out as much liquid from the zucchini as possible. When dry, Transfer the zucchini to a large bowl.
Add the flour, egg, ¾ of your sliced scallions, salt and pepper to the bowl, stirring until the mixture is combined.
Add large drizzle of olive oil to skillet set over medium heat.
Using a tablespoon or ice cream scoop, form even balls of your zucchini batter and place in pan about 2 inches apart. Lightly flatten with a spatula and cook on both side 3-4 min until golden brown.
Transfer the zucchini fritters to your wire cooling rack and sprinkle with salt.
Serve the zucchini fritters topped with sour cream (optional) and remaining sliced scallions. I also added broccoli micro greens on mine to be fancy! 😊
