Super Easy Low Calorie Veggie Snack - Zucchini Fritters

Hey hey!

I love squash and all its varieties... acorn, spaghetti, butternut, winter or summer squash aka zucchini. Zucchini is so fun and versatile and pairs well with just about anything. I recently made zucchini fritters and knew I had to share the recipe. So here's an easy, quick, low calorie, veggie snack you'll definitely have to make more than once.

Here's What You Need:

  • 1 large zucchini
  • 1 sliced green onion
  • 1/2 cups all purpose flour
  • 1 egg
  • 1/4 monterey jack cheese
  • 1 tsp olive oil (plus additional oil for cooking)
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • Optional: a few dollops of sour cream for serving

You'll also need a grater, colander, mixing bowl, non stick skillet, wire cooling rack.

 

Timing:

  • Prep: 20 min
  • Cook: 5-10 min
  • Yields 4-5 Fritters

Let's Make Some Fritters:

  1. Trim the ends off of your zucchini and shred the remaining with a grater.

  2. Place the shredded zucchini in a colander set inside a bowl and sprinkle lightly with salt. Allow the zucchini to sit for approx. 10 minutes.

  3. Push/squeeze out as much liquid from the zucchini as possible. When dry, Transfer the zucchini to a large bowl.

  4. Add the flour, egg, ¾ of your sliced scallions, salt and pepper to the bowl, stirring until the mixture is combined.

  5. Add large drizzle of olive oil to skillet set over medium heat.

  6. Using a tablespoon or ice cream scoop, form even balls of your zucchini batter and place in pan about 2 inches apart. Lightly flatten with a spatula and cook on both side 3-4 min until golden brown.

  7. Transfer the zucchini fritters to your wire cooling rack and sprinkle with salt.

  8. Serve the zucchini fritters topped with sour cream (optional) and remaining sliced scallions. I also added broccoli micro greens on mine to be fancy! 😊
