Mixology Monday With The Leveretts - Bee's Knees

Hey Hey!

I just love this cocktail! This prohibition era drink definitely lives up to its name! You only need a few ingredients: gin, lemon juice and honey syrup so whipping this up is super quick. We will walk you through how to make the honey syrup as well as this refreshing cocktail.  We hope you enjoy! This makes 2 drinks! Let's get started!

Here's what you need:

For Garnish
2 Lemon Peel Spirals

2 Sprigs of Thyme

For Honey Thyme Syrup
1 Part Honey (adjust to taste; you can also equal part sugar for a sweeter syrup)
1 Part Water
Several Sprigs of Thyme (we specifically used lemon thyme)

For Drink
4 oz. Gin (we used Hendricks Lunar) 
1.5 oz. Honey Thyme Syrup
~2 oz. Fresh Squeezed Lemon Juice

 

You will also need a shaker cup, hawthorne strainer and 2 coup glasses.

Let's Make the Honey Syrup!

  1. Combine 1part water and 1 part honey (along with 1 part sugar if you choose) along with your thyme in a small saucepan. Bring to a boil over medium heat, stirring constantly until honey dissolves and liquid reduces (approx 10-15 minutes) Remove from heat, and cool to room temperature, and strain out thyme. 

 

Let's Make the Drink!

  1. In your shaker cup add:

    • Gin (4 oz.) (we used Hendricks Lunar Gin)

    • Honey Thyme Syrup (1.5 oz.)

    • Fresh Squeezed Lemon Juice (~2 oz.)

  2. Shake for 10 - 20 seconds or so.

  3. Pour equally between your coup glasses.

  4. Garnish with lemon spiral and sprig of thyme

  5. Enjoy!
