Today's recipe is for a cocktail known as the signature drink of the Kentucky Derby. We think our version which includes a peach simple syrup and grilled peach garnish is better than good enough to enjoy not just in the spring on Derby Day but all throughout summer. This makes 2 drinks! Let's get started!
For Garnish
2 Peach Slices
2-4 bunches of mint leaves
1 tsp honey
For Simple Syrup
4 oz. Sugar
4 oz. Water
2 Peaches Chopped
2-4 Sprigs of Thyme
For Drink
3 oz. Kentucky Bourbon Whiskey (However we chose to use Monkey Shoulder, a malt scotch whiskey)
2 oz. Peach Simple Syrup
8-10 Fresh Mint Leaves
Crushed Ice
You will also need a mixing glass, muddler, strainer, 2 rocks glass/tumblers, sauce pan and grill/grill pan.
In a small pot/saucepan add:
Sugar (4 oz.)
Water (4 oz.)
2 Peaches (chopped)
2-4 Sprigs of thyme
Cook of medium heat until reduced by half.
Strain and set aside.
While your simple syrup cools, cut two 1/4 inch slices of peach.
Rub each side with small amount of honey.
Grill over medium heat for 1-2 minutes on each side.
Set aside to cool.
In your mixing glass add:
Mint leaves (8-10 leaves)
Peach Simple Syrup (2 oz.)
Muddle and set aside.
Fill each 8 oz. rocks glass with crushed ice.
Add Bourbon Whiskey & stir gently (1.5 oz for each glass)
Top with the mint muddled Peach Simple Syrup. (1 oz for each glass)
Garnish with grilled peach slice & fresh mint.
